How to Make Nigerian Meat Pie Recipe

    Nigerian Meat Pie Ingredients

    The number of meat pies you will get depends on the diameter of the meat pie cutter you use. A cutter that is 8 inches (20cm) in diameter will give you about 10 meat pies with the following ingredients.

    For the Nigerian Meat Pie dough

    • 1kg (2.2 lbs) plain flour (All Purpose Flour)
    • 2 teaspoons baking powder
    • 500g (1.1 lbs) Margarine
    • 2 pinches salt
    • ½ cup / 125 ml / 4.2 oz cold water

    For the Nigerian Meat Pie filling

    • 2 medium Irish potatoes
    • 2 medium carrots
    • 500g (1.1 lbs) minced meat
    • 1 medium onion
    • 2 cooking spoons vegetable oil
    • 2 Knorr cubes
    • 1 teaspoon thyme
    • 2 tablespoons plain flour
    • 1 cup / 250 ml / 8.4 oz cold water
    • Salt to taste

    Nigerian Meat Pie: Ornamental Ingredient

    • 1 medium egg

    Tools you will need to make a meat pie

    • Oven: This will be used for baking the meat pie. Buy it in USA | in UK
    • Dough Roller or good old wine bottle. Buy dough roller in USA | in UK
    • Kitchen scale: Buy it in USA | in UK
    • A table: You will need a flat surface to roll out and cut the dough for the meat pie.
    • Meat Pie cutter: There are special cutters in the market but if you have a pot cover with sharp edges that can make a clean cut on the flattened dough, please use this.
    • Table fork: This will be used to press the edges of the meat pie after the filling has been added.

    Directions for preparing the Nigerian Meat Pie

    The Nigerian Meat Pie Filling

    1. Peel the Irish potatoes and scrape the carrots, wash and cut these two into tiny cubes.
    2. Wash and slice the onions into tiny pieces.
    3. With your cooker or stove set to medium heat, heat the vegetable oil in a pot, add the diced onions and stir for a bit, add the minced meat and stir vigorously till the minced meat turns pale.
    4. Add 1 cup of water, Knorr cubes and thyme. Cover the pot and once the contents of the pot starts boiling, add the diced carrots and potatoes and cook till everything is well done.
    5. Dissolve 2 tablespoons of plain flour in half cup of cold water and add to the meat pie filling. This tip is so that the meat pie filling does not dry up during baking. It is also what keeps the meat pie filling moist.
    6. Add salt to taste, stir the contents and turn off the heat. Set the meat pie filling aside. Now is the time to prepare the dough for the meat pie.

    The Nigerian Meat Pie dough

    1. Put the 1 kg of flour in a sizeable bowl; add 2 teaspoons of baking powder and 2 pinches of salt. You really do not need a lot of salt for the meat pie dough. The meat pie will get most of its taste from the filling. Mix these dry ingredients very well.
    2. Use a tablespoon to scoop the margarine in small bits into the bowl of flour. The smaller you make the bits of margarine, the easier it will be for you to rub them into the flour.
    3. Use finger tips to rub the margarine into the flour till the mix becomes like crumbs.

      Note: In Nigeria, we also refer to margarine as butter but for my audience in the Western countries, please do NOT use butter for the meatpie dough because butter is too hard and this makes it difficult for you to mix it with the flour to achieve the crumbly look. So please use margarine.

      Also butter is quite heavy so it makes the dough very greasy which hinders the elasticity of the dough.

      Can I use melted butter? No, because it simply ruins the meat pie.
    4. Now, start adding cold water in bits while at the same time folding the mix till a stiff ball of dough is formed. You will be surprised at how small quantity of water you need to get the dough stiff. At most, all you need for the 1 kg of flour is half a cup of water.
    5. Knead the dough very well, put back in the bowl and leave to rest for 5 to 7 minutes. This makes the dough more elastic.

    Cut, Fill, Fold and Close

    1. Set your oven to 170°C (335°F) and leave to preheat while you continue with the meat pie.
    2. Rub margarine on the insides of the oven tray and set aside. This is so that the undersides of the meat pies do not burn or stick to the tray during baking.
    3. Break the egg, beat it and set aside, you will need it pretty soon.
    4. Knead the dough some more, roll it out to achieve a 5mm thickness.
    5. Use a cutter, be it the cover of a small pot or a meat pie cutter, to make round cuts on the rolled out dough.
    6. Remove the excess dough, leaving behind the round cuts.
    7. Scoop some meat pie filling into the center of the round cuts, the quantity should be such that you can comfortably close the dough without overflows. Don't worry if you over-filled the first one, you have many meat pies to fill today so at some point you will know just the right quantity of meat pie filling to scoop into the dough.
    8. Rub the egg on the inside edge of the cut meatpie dough. Watch the video to see how this is done. This is to ensure that your meat pie is perfectly sealed and does not open up while it is being baked.
    9. Fold one part of the dough to meet the other end and use a fork to press the 2 edges together to close tightly. Place your work of art in the oven tray and repeat the previous step till all the cut out dough is exhausted.
    10. Roll out more dough, cut, fill, close and place in the greased oven tray till all the dough is used.
    11. Rub the egg on the meat pies. This gives the meat pie a golden brown look when done.
    12. Set the tray in the preheated oven and bake for 30 to 40 minutes. This time will depend on the type and heating capacity of your oven. For some ovens, the meat pie will be done in half an hour, for some, it may take up to 50 mins. Whatever type of oven you have, the important thing to know is that the best meat pies are the ones baked at medium heat. You can confirm that the meat pie is done when it starts browning. It is alright to open the oven to check this.
    That's how the Nigerian Meat Pie is made. It may seem like a long process just because the procedure as explained here is very detailed and includes lots of tips that are often over-looked. You will see that it is an easy and straight-forward recipe when you actually do it. But why worry about the time it will take? Just think of all the yummy meat pies you will be eating. :)

Mourinho cirticised for defensive approach


Chelsea have been criticised for being too defensive-minded by Southampton boss Ronald Koeman, who thinks Jose Mourinho should teach “fantastic football” like Arsene Wenger has Arsenal playing.

The Saints piled additional misery on Mourinho's men when they triumphed 3-1 at Stamford Bridge last weekend, leaving the Blues rooted fifth-from-bottom in the Premier League after eight games.

Koeman believes Chelsea's tactical approach of retreating after taking the lead rather than going for the opposition's jugular doesn't work in their favour, and hit out at Mourinho for relentlessly moaning about officiating.

"Chelsea prefer to defend when attacking is also an option," he is quoted as saying in the Sunday Mirror.
"Mourinho always chooses to defend. Even if his team goes 1-0 up, they would rather defend their lead than try to score more goals.

"Yet Arsenal can kill an opponent. That is why their victory against Manchester United was so impressive.

"Attacking-wise, they completely destroyed United. For 20 minutes, they played the most fantastic football, while Chelsea do the opposite thing.

"By defending, Chelsea give their opponent a chance to come back in the game. It was a shame that Mourinho was putting attention on the referee after we beat them.

"He wanted to have a penalty in the first half. But, in the first half at Stamford Bridge, Southampton should have had two penalties."

Chelsea defeated Arsenal 2-0 in September – one of only two wins so far in the league this campaign – as Mourinho's verbal feud with Gunners boss Wenger continued.

Arsenal are second Manchester City in the table and have 16 points compared to Chelsea's eight in 2015-16, though their Champions League fortunes are considerably more dire than their London rivals.

GLOBAL REPORTS: WORLD FOOD PRICES DROP IN AUGUST


The United Nation Food and Agriculture Organisation have reported that the World food prices had their most dramatic one-month fall in nearly seven years in August, 2015.
It said in its publication that this was the 16th time in 17 months that the index would decline.
The report has it that the food Price Index fell to 5.2 per cent compared to July, its biggest one-month decline since December 2008, with prices pushed lower by strong production in most food commodity groups.
Prices for grains and cereals, the largest component in the index, fell to 7.0 per cent compared to July which is now 15.1 per cent lower than a year ago.
Rice prices remain stable based on high demand in China and elsewhere in Asia, but wheat and corn prices dropped dramatically amid strong production forecasts.
Almost all commodity prices fell, with oils and fats down to 8.6 percent, milk prices 9.1 percent lower, sugar prices 10.0 per cent lower, while meats edged only slightly lower, the only commodity group to buck the trend of dramatic slides.
The next installment of the FAO index, which is based on a basket of 55 goods and 73 price quotations in five major food commodity groups, will be released by the 8th of October, 2015.

2015 WORLD EGG DAY

As the World commemorates this year’s World Egg Day, the Poultry Association of Nigeria Ogun State Chapter (PANOG), has emphasized the need for every Nigerian child to eat at least one egg per day for optimal health, due to its high level of nutritional values.
Speaking with AgroNigeria on the theme of this year’s celebration “Benefits of an egg a day for the Nigerian child”, the State Chairman PANOG, Dr. Olalekan Odunsi said eggs contain a perfect combination of protein, 12 vitamins and 12 minerals, adding that aside from breast milk, eggs have the highest protein biological value.
Odunsi noted that eggs also contain amongst others Zeaxanthin and Choline which are essential for healthy eyes and helps in building the membranes of the cell, respectively.
He said “eggs improve a child’s concentration level and attention span, while increasing their ability to learn, assimilate and expands their memory. It is also important for the development of the brain because it contains Choline.”
The State Chairman while relating the recent data released by the World Health Organisation (WHO) said about 1.7 million Nigerian children under the ages of five, are severely and acutely malnourished, accounting for 10 percent of the global total of malnourished children.
To this end, Odunsi stated that the essence of advocating an egg per day is because eggs have the required nutrient that will help cure Kwashiorkor and other related diseases as well as boost the immune system.
He therefore called on the government and all regular government agencies such as the ministry of agriculture, women and children to launch a campaign that will sensitize the general public on the need to consume at least one egg per day.
Odunsi also urged the Federal Government to include eggs in its promised feeding programme for primary school children as well as support poultry farmers to meet the rising demand of producing enough poultry products for its citizens.He noted that this sector will play a vital role in boosting the Nigerian Economy in the non-oil sector, while recommending that the government should look intently into the sector in its drive to cause change in the economy.
Also speaking, the host chairman PANOG Ota Zone, Adebayo Adewumi stated that eggs do not contain saturated fat but contains dietary cholesterol that does not harm the body.
Adewumi said the process of preparing the egg can have a bad effect on its productivity, he therefore advised that there is a need to employ caution as to the type of oil and other conjunction used in the preparation.
In her remark, the Chairperson PANOG Remo Zone, Mrs Blessing Alawode said egg is one of the cheapest sources of protein in the country. In this regards, she said an average Nigerian child has no business being malnourished.
She therefore urged parents and children to “grab an egg and keep malnourishment away.”

Jurgen Klopp: Liverpool close to appointing new manager

Liverpool are close to appointing former Borussia Dortmund boss Jurgen Klopp as their new manager on a three-year contract.
The Reds hope to complete negotiations by Thursday and name the 48-year-old German as Brendan Rodgers' successor by the end of the week.
Rodgers was sacked on Sunday following the 1-1 Premier League draw at Everton.
Klopp has asked to bring former assistants Zeljko Buvac and Peter Krawietz as part of his coaching staff.
Bosnian Buvac, 54, and German Krawietz, 43, were key members of Klopp's backroom team during his time at Dortmund.
Liverpool had also been considering former Real Madrid and Chelsea manager Carlo Ancelotti, who is currently out of work.
But the 56-year-old Italian has suggested he may only return to management next season.
He said: "I enjoy my time now but, of course, I want to come back to manage - to work - because it is my passion.

Mourinho sets a bad example - Cruyff

The behaviour of outspoken Chelsea manager Jose Mourinho sets a bad example for young people, Dutch football great Johan Cruyff said on Tuesday.
Mourinho has hogged the headlines over the opening weeks of the Premier League season, hitting out at rival managers and attracting criticism for sidelining female team doctor Eva Carneiro, who has left the club.
Mourinho was also charged with misconduct by the Football Association for criticising the referee after a 3-1 loss at home to Southampton last Saturday that left his side two points above the relegation zone.
"What I like about him is he's always capable of creating good ambience within the players and what I don't like is that he always puts himself on the first row," Cruyff told British television channel Sky Sports News.
"He should be on the second row. It's probably because of his (non-playing) background, where he's never been cheered by 100 000 people, or whistled at by 100 000 people.
"Maybe it's because of that, maybe because of the interest from the press, but I don't think he is educating children to play football or educating for life.
"He should behave better because he will be in the press all over the world."
Cruyff, emblematic star of the great Holland team of the 1970s and a former coach of Ajax and Barcelona, also reopened an old feud with his countryman Louis van Gaal, the Manchester United manager.
"He doesn't dominate," said Cruyff, 68. "I like dominating football. Manchester doesn't play like that."
He added: "Results, I think, are second. The game is first. Money is very important, but always second. In England they play different; everybody has their own style. A mix of styles is always good.
"The most important part are the fans, that people are going home happy. It's their time off and you should give them something to enjoy.

Military issues warning to Boko-Haram


The Nigerian Army Head-Quarters has issued a warning letter to Boko-Haram.
The letter was released and signed by the Acting Director Army Public Relations, Col. Sani Kukasheka Usman.
The letter reads “This is to warn all Boko Haram terrorists wherever they are, to desist from all acts of terrorism, surrender themselves and face the law now. We wish to inform them that we are aware of all their hideouts, camps and enclaves. They should follow their colleagues who have so far surrendered. Failure to surrender will result in serious consequences as our troops are fast closing up with them.”

The Army also said “We equally appeal to the parents, families and friends of all those involved in Boko Haram terrorists activities to kindly persuade them to desist and renounce their membership of the terrorist organization forthwith.”

3 scientists, awarded for their work on parasitic diseases

William CampbellSatoshi Omura and Youyou Tu jointly won the 2015 Nobel Prize for medicine for their work against parasitic diseases, the award-giving body said on Monday.
Irish-born Campbell and Japanese Omura won half of the prize for discovering a new drug, avermectin, that has helped the battle against river blindness and lymphatic filariasis, as well as showing effectiveness against other parasitic diseases.
The Chinese scientist Youyou Tu was awarded the other half of the prize for discovering artemisinin, a drug that has significantly reduced the mortality rates for patients suffering from malaria.
"These two discoveries have provided humankind with powerful new means to combat these debilitating diseases that affect hundreds of millions of people annually," the Nobel Assembly atSweden's Karolinska Institute said in a statement in awarding the prize of 8 million Swedish crowns ($960,000).
"The consequences in terms of improved human health and reduced suffering are immeasurable. "
Despite rapid progress in controlling malaria in the past decade, the mosquito-borne disease still kills more than half a million people a year, the vast majority of them babies and young children in the poorest parts of Africa.
Medicine is the first of the Nobel prizes awarded each year. Prizes for achievements in science, literature and peace were first awarded in 1901 in accordance with the will of dynamite inventor and businessman Alfred Nobel. ($1 = 8.3372 Swedish crowns)
